October is Texas Wine Month, and one of the most beautiful times of the year to visit the Hill Country. This is our first @texashillcountrywine Passport event, and we are excited to share a bit of Siboney with everyone! We welcome your reservation and await your arrival at our estate winery, just 4 miles west of Johnson City on US Highway 290.
The THCW Passport tasting is a reserved, seated experience (with a few special touches, just you wait!) held in our Private Tasting Room, or the Barrel Cellar. It is complimenatry for THCW Passport Holders (we will scan your Passport in the tasting room at the time of your reservation!)

Seating is reserved for up to 8 guests for each tasting session. This is an exclusive introduction to the wine, culinary, and hospitality experience that makes Siboney unique. You will also receive special offers exclusively created for Texas Wine Passport Holders. Please arrive 5 minutes before your reservation, and schedule 1 hour for your visit.

Harvest season puts every part of the winery into motion. For the 2025 vintage to come, Barbara has worked out the barrel program. The team is literally on a roll in the seller, moving barrels into position. New and “nearly new” French oak barrels are slotted into the oxo line rack. Meanwhile, several dozen barrels are pulled and retired this year. You’ve enjoyed some spectacular wines from those retired barrels! Moore is on the way. Over the past three days we have hosted several groups for an incredible tasting experience in the winery. Sampling the newly fermented wine, followed by tasting the macerated grapes, you really get a true picture of the components and building blocks of wine.
